Ndole and Ripe Plantain
700 gr of bitter leaves
750 gr of meat of choice
3 of dry Cod fish
350 gr of peanut without skin
500 of fresh shrimp
1 big onion cut into desired shape
4 large leek branches
2 big onions cut into large cubes
1 bulb of garlic or 7 cloves of medium size garlic
1 tablespoon of ginger
200 ml of cooking oil
Salt (to taste)
Cub (to taste)
2 tablespoons of white pepper
1 ½ tablespoons of black pepper
Hot pepper (to taste)
10 ripe plantain

In a pot, boil the peanut with ¼ of cut onion on medium heat for 15 minutes
In a separate pot boil the meat with salt, black pepper and ¼ of cut onions until desired cooked level
Remove the peanut and blend until it is smooth on the touch
In an empty pot, pour the blended peanut and cook on low heat for 30 minutes
If the water leaves are dry, boil them with kosher salt for 45 minutes and rinse it at least 5 times to take out the bitter tastes. If the leaves are fresh, boil them with kosher salt for 20 minutes and rinse multiple times until the bitter taste is almost gone.
Add the bitter leaves to the peanut and let it boil for another 15 minutes
Peel the plantains, cut each in half, place in an empty pot, add water past the plantains and boil on medium heat until cooked.
Remove the cooked meat and add the bitter leaves and peanut along with the water from the boiled meat, add the smoked fish and let it cook for 5 minutes.
Blend the garlic, ginger, 2 onions, hot pepper, and leek leaves together, and add to the bitter leaves soup and let cook on low heat for 20 minutes
In a frying pan pour the cooking oil, add the fresh shrimp, add some salt and the ½ cut onion and fry together.
Add to the soup black/white pepper and add water if needed
Add the fried shrimp into the soup and add salt (to taste), cube (to taste). Close the pot, reduce the fire to low, let it cook for 10 more mins.
Serve the Ndole with the boiled plantain hot
